I spent months perfecting this recipe. I tested a version almost every day, and batch after batch came out flat. I searched, I asked, I watched every video I could find, and none of it fixed it. The filling kept working its way out of the seam. So I started changing one thing at a time and writing down every detail, for months, until the cookies finally came out looking the way they do today.

Then the city I sold them in fell for them. Messages almost every day about how good they turned out. The same people reordering week after week. At some point it stopped being a recipe that finally worked and became the thing I did for a living.

Questions

Do I need special equipment?

A kitchen scale and a normal oven. A stand mixer or hand mixer makes it easier, but you can mix this dough by hand — it is a firm dough, so it takes a bit of arm, and it works.

How do I receive the recipe?

A download link appears right after payment and also arrives by email. The PDF opens on your phone, tablet or computer, and you can print it.

Can I sell the cookies I bake?
